About 20 minutes before grilling, take steaks out the refrigerator and let sit covered at room temperature.
Season steaks 10 minutes before cooking with our steak seasoning (instructions below). Thoroughly whisk together the dry ingredients in a bowl making sure there are no clumps.
2 tablespoons of extra-virgin olive oil (or try sesame oil for a hint of nutty flavor)
2 tablespoons coarse kosher salt
3 tablespoons smoked Hungarian paprika
2 tablespoons cracked peppercorn blend
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon dried thyme
Note: Brush the steaks with oil and season meat generously with this mixture before cooking.
Set up your cooker for direct cooking and raise temperature to 650 degrees. Grill steak to desired doneness, check internal temperature, if needed. Let steaks rest approximately 3 minutes before serving.
Try serving steaks with a fresh herb butter. How? Simply combine fresh, chopped herbs like parsley, chives, rosemary and thyme with softened unsalted butter. Add minced garlic, sea salt and a cracked peppercorn blend. Spoon herbed butter blend on to a sheet of plastic wrap and roll into a log shape. Then, refrigerate until firm (about 2 hours). Add a pat of butter to steak and serve!
Note: Herbed butter may be frozen and thawed as needed
